Beekeepers Pancake Day

Shrove Tuesday is upon us, the day we celebrate being shriven, having presented ourselves to a priest for confession, penance and absolution in preparation for lent.

Celebration being enjoyed in the form of pancakes is as far as many of us go nowadays and I have to admit that I spent today out at work in the pleasant warmth and sunshine of early spring without a priest in sight.

As a beekeeper with a store cupboard full of last seasons honey I was bound to take my pancake pleasure with some of the liquid gold sweetness of summer 2020.

A simple reduction of orange and lemon juice with a generous dollop of honey reduced until it caramelised did the trick. A dash of brandy was added to Chelle’s whilst I enjoyed the sober pious version.
